Natural Blue Food Coloring
Natural blue food coloring is one of the most sought after natural food coloring ingredients. Blue is also one of the most difficult for nature to produce.
A true vivid and deep blue color does not yet exist on the market. There are variations of lighter colored blue shades and several natural food coloring manufacturers offer a natural blue, however it falls short of the Blue 1 counterpart.
There is a US Patent (No. 7279189) on a natural blue coloring derived from anthocyanins extracted from red cabbage. This is regulated as a vegetable juice additive and is available in both liquid and powdered form.
