Annatto Extract
Annatto Extract is a natural food coloring additive that is extracted from the seed coats of the tree, Bixa orellana L., using any one or a combination of food grade extractants. The achiote tree produces the source seeds and thrives in tropical conditions at low elevations. The achiote is also referred to as the 'lipstick tree' due to the color use in cosmetics and has heart shaped leaves with delicate white to pink flowers. The flowers bear the seed pods which contain hundreds of rust colored seeds when fully matured. The resinous material surrounding the seed is the source of this color additive. The technical chemical name for the color principle of annatto is Bixin.

Annatto Extract is available in water soluble, emulsion and oil soluble forms, each used for specific applications.
Water Soluble; ice cream, natural cheese, cereal, baked goods, dry mix, soup mix, baking mix, spice blends and meat rubs.
Emulsions; fruit drinks, butter, yogurt, baked goods, sherbet, seasoning, confectionary, salad dressing, snack food, coffee creamer, cheese, beverages and frozen desserts.
Oil Soluble; process cheese, margarine, butter, vegetable oil, salad dressing, snack food, baked goods, confectionary coating, frosting, seasoning and popcorn oil.
Annatto Extract is one of the few natural food colorings which is available as Certified Organic in water and oil soluble forms.
